Moroccan tomato soup 2 tablespoons olive oil Heat the olive oil in a large saucepan over medium heat. Add the onion and chillies and cook for 5 minutes or until tender. Mix in the cumin and coriander and cook for a further minute. Once combined stir in the tomatoes, stock and sugar and season with freshly ground pepper and sea salt. Simmer, uncovered, for 15 minutes. Stir in the fresh coriander and puree the soup in batches in a food processor or blender until almost smooth. Return pureed soup to saucepan and gently re-heat.
Grazing platter On a large plate arrange a good wedge of baked ricotta, pancetta, fried chorizo, baby tomatoes, basil leaves, hummus, marinated mushrooms and marinated olives and serve with parmesan crisps. Add button mushrooms, cherry tomatoes and in bowls place guacomale and beetroot dips and serve with polenta crisps. Cheese platter All of the parmesan and polenta crisps are delicious with your favourite cheese platter and fresh fruit. |
