Semi-Dried Kalamata Olive Crispy Flatbread

Mediterranean salad

Serves 4 as a side dish

2 lebanese cucumbers, peeled, deseeded and diced
1 red capsicum, deseeded and diced
1 punnet cherry tomatoes cut in half
200gm feta cheese, diced
? red onion, peeled and finely sliced
1 teaspoon red wine vinegar
2-3 tablespoons extra virgin olive oil
dried oregano
1 x 200gm packet Semi Dried Kalamata Olive Crispy Flatbread

In a large bowl combine cucumber, capsicum, tomatoes, feta and onion. Make a dressing with red wine vinegar and olive oil, season with sea salt and freshly ground black pepper. Drizzle over the salad and sprinkle with dried oregano. Serve with flatbread.


Organic Sea Salt Breadsticks

Insalata caprese

Serves 4 as a side dish

4 roma tomatoes, thinly sliced
4 baby boccocini (baby mozzarella), thinly sliced
Fresh basil leaves
Red wine vinegar
Extra virgin olive oil

1 x 200gm packet Organic Sea Salt Breadsticks

Arrange on a plate slices of tomatoes topped with boccocini and basil leaves. Drizzle with vinegar and olive oil and season with sea salt and freshly ground black pepper. Serve with organic sea salt breadsticks.

Sesame & Poppy Seed Crispy Flatbread

Shredded Peking Duck on Flatbread
 
1/2 Chinese barbecued duck
hoisin sauce
bunch green shallots
1 x 200gm packet Sesame & Poppy Seed Crispy Flatbread, broken into bite sized pieces

Shred the skin and flesh from the barbecued duck and place on flatbread. Add a drop of sauce and sprinkle with shallots and serve with your favourite drink.

Pate & Pear flatbread

Pheasant pate
1 ripe pear, peeled, cored and sliced
Handful wild rocket
1 x 200gm packet Sesame & Poppy Seed Crispy Flatbread, broken into bite sized pieces

Spread pate on to flatbread, top with sliced pear and rocket and sprinkle with freshly ground pepper.

Summer salad

Serves 4 as a side dish

1 bunch wild rocket
1 orange, peeled & segmented
20gm shaved parmesan cheese
Splash balsamic vinegar
4 Sesame & Poppy Seed Crispy Flatbread

Combine rocket, orange and parmesan cheese in a large bowl, sprinkle with balsamic vinegar. Serve with flatbread.


Jordanian Sumac Crispy Flatbread

Middle Eastern Platter

On a large platter arrange dolmades, falafels, marinated black and green olives, marinated eggplant, hummus, baba ghannoush and tzatziki and serve with Jordanian Sumac Crispy Flatbread broken into bite sized pieces.

Roasted Garlic and Cracked Pepper Breadsticks

Prosciutto wrapped breadsticks

thinly sliced prosciutto
1 x 200gm packet Roasted Garlic and Cracked Pepper Breadsticks

Wrap prosciutto around breadsticks and serve with your favourite drink.


Moroccan Spice Breadsticks

Moroccan tomato soup
Serves 4

2 tablespoons olive oil
1 onion, roughly chopped
2 small fresh red chillies, deseeded & finely diced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 800g Italian peeled tomatoes, undrained & roughly chopped
435mls chicken or vegetable stock
1 teaspoon caster sugar
good handful fresh coriander leaves, roughly chopped
Moroccan spice breadsticks

Heat the olive oil in a large saucepan over medium heat. Add the onion and chillies and cook for 5 minutes or until tender. Mix in the cumin and coriander and cook for a further minute. Once combined stir in the tomatoes, stock and sugar and season with freshly ground pepper and sea salt. Simmer, uncovered, for 15 minutes. Stir in the fresh coriander and puree the soup in batches in a food processor or blender until almost smooth. Return pureed soup to saucepan and gently re-heat.
Serve into bowls and serve with Moroccan spice breadsticks.


Cayenne Pepper Parmesan Crisps

Grazing platter

On a large plate arrange a good wedge of baked ricotta, pancetta, fried chorizo, baby tomatoes, basil leaves, hummus, marinated mushrooms and marinated olives and serve with parmesan crisps. Great for a lazy Sunday evening meal.

Fennel Seed Parmesan Crisps

Antipasto platter

On a large platter place frittata wedges, olives, baby boccocini, semi dried tomatoes, marinated artichoke hearts, Persian fetta, roasted red capsicums, tapenade, good quality salami and proscioutto wrapped breadsticks. Serve with parmesan crisps.

Polenta Crisps

Vegetable crudite

Arrange on a large platter, sticks of carrots, red capsicum, celery, cucumbers and fennel. Add button mushrooms, cherry tomatoes and in bowls place guacomale and beetroot dips and serve with polenta crisps.

Cheese platter

All of the parmesan and polenta crisps are delicious with your favourite cheese platter and fresh fruit.
