Simon Sirotti who is the head barista and number 7 ranked barista in Australia said “I’m committed to excellence in beans, top quality equipment and staff training to create consistency in coffee production”
“We are very pleased to be the sponsor of this award because it recognizes excellence in the café business which both winner and runner up have achieved and we at Byron Bay Cookie Company are very driven by excellence” said Richard Ray Sales and Marketing Manager
There are 3 things that Byron Bay cookie Company claim underpin their drive for excellence. Extravagant inclusions of nuts, choc, fruits and spices which elevates the quality above the competitors The unique soft moist texture of the cookies which makes them very different to competitors and the obsession with building and nurturing their brand
The entry for the Café smart awards asked cafes to complete 5 sections which Byron Bay Cookie company parallel the important areas of their business.
Section one was about images of the café which Richard Ray said “is the equivalent of our packaging and something that is so important to get peoples attention and to get on the consideration list” A company’s image is often their most valuable asset.
Section two was about customer service. This is an area which is easy to talk about but difficult to do consistently. It’s also an area that consumers expect more and more. “It’s an area that we pride ourselves on particularly as many people assume that being from Byron Bay that we have a casual approach to life and service. The Export award we won a few weeks ago and the Telstra small business awards we one previously are obvious testaments to this” said Richard
Section three was about the uniqueness of the café’s menu which is a real challenge in such a crowded business but product development is something that is the life blood of any business. “We have distinct texture and a huge range of flavours but competitors are always trying to copy us so we invest a lot of time in improving our cookies and being innovative. As an example we’ve just launched a new biscotti stick which will change the way everyone thinks about biscotti.” claimed Richard
Section four covered coffee and entrants were asked to describe how the presentation and service of coffee impacted on their business. “We believe presentation is critical and certainly coffee is close to our heart as its growth has been a catalyst in our growth. In the same way that a coffee makes a statement about the quality of a café so does a cookie” said Richard
Section five was about business initiatives that have been the key to a cafes success. “We are passionate about new ideas not just new flavours but ways to display our products, new point of sale such as the swing tag clip on, new packaging ideas and new places to sell our products” said Richard. Byron Bay are about to introduce a 75gm , 6 pack take home and gift tray of cookie which will be a perfect companion sell for innovative cafes and an example of an initiative to drive sales for cafes
“We are already working on next years awards which we expect to bigger and better. The conditions and entry requirements will change so even more interest and entries and prestige will be achieved for everyone involved” said Richard.
